Peanut Butter Cookies
Makes approximately 16 cookies
Ingredients:
1 ripe banana
1 cup granulated sugar
1 cup creamy peanut butter
1 teaspoon baking soda

Directions: Preheat oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper.
In a mixing bowl, mash the banana with a fork and stir in the sugar and baking soda. Once mixed, fold in the peanut butter. Use a small ice cream scoop to place the batter on cookie sheet. (These will spread, give them room). Bake for 10 minutes and allow to cool completely.

Optional: Drizzle with melted chocolate chips.
Pomegranate Lime Fruit Salad
Serves 2
Ingredients:
2 cups watermelon, cubed
1/2 cup pomegranate seeds
1 large mandarin orange, peeled
1 Tablespoon pomegranate juice
1 lime, juiced
2 teaspoons, maple syrup

Directions: Place the fruit in a medium mixing bowl. Stir together the juices and maple syrup and pour over the fruit. Add optional toppings.

Optional toppings: unsweetened shredded coconut, seeds (chia, ground flax, hemp), or nuts (almonds, walnuts, macadamia)
