Vegan Pesto

1 cup fresh basil

1 cup fresh arugula

1 small avocado (peeled, chopped)

1/4 cup walnuts

Juice from 1/2 lemon

1 clove of garlic

1/4 tsp each salt and pepper

1/4 cup water (drizzled in)

 

Instructions:

Dump everything except the water into a food processor and purée...drizzle in the water to make a thick, creamy sauce. You can continue to thin with water to your desired consistency. Adjust salt and pepper to taste.
