Sweet Snack Box

I don't know about you, but my days are HECTIC! Between work, school for the boys, and trying to keep the house from completely becoming unmanageable, a good focus on my nutrition can be the last thing on my mind.


I can't be the only mom who sometimes considers the crusts from her son's PB Sandwich as lunch? Right?................Right?!


Good nutrition is not about perfection. It's about making the better choice the easier choice. A plan and a well-stocked pantry can help with this.


I try to keep sweet and savory snack boxes in my fridge for those days that are just back to back activities. These are great to grab and toss in your lunchbox or to pull out when working from home.


Keeping a well stocked pantry led to both he trail mix and the energy balls being quick and easy additions to my snack box. Throw in some fruit and you have a well-balanced light lunch or snack.


Fruit, Veggie or both: Strawberries, clementines, dried cranberries, unsweetened coconut

Whole Grains: Shredded wheat, rolled oats

Protein: Peanut butter, pecans, pepitas



The peanut butter energy balls are yummy bites of grains, protein, and healthy fats. The best part? They are only 4 ingredients and come together in minutes!


Peanut Butter Energy Balls

3 cups, old-fashioned rolled oats

1 1/4 cup, creamy peanut butter

1/4 cup, maple syrup

1/4 cup, mini chocolate chips


Directions: Add first 3 ingredients to stand-mixer fitted with a paddle attachment and cream together. Fold in chocolate chips. Scoop tablespoon of dough and shape into balls with your hands. Place on parchment paper and refrigerate until firm. Store in fridge or freezer.
